Since it's nearly Christmas (yes it is, stop hiding and embrace it!) I had a go at a vegan Swiss roll. I used my usual trick of whipping soy pudding with rice milk to make the basic sponge, filled it with chocolate buttercream, and then slathered it with chocolate icing. And of course, I had to do the traditional 'log' effect by drawing a fork through the icing. It's finished with Suma glace cherries.
The funny thing it, this is the easiest Swiss roll I've done - I don't know if it's my makeshift vegan recipe, or the fact that I haven't made one for so long that I just recklessly rolled it up without hestitation, but there was very little cracking of the cake.

ReplyDeleteMy soy pudding trick is a bit cheaty from a baking POV because I use Alpro Soya dark chocolate puddings, add rice milk, and whip it all up until it's frothy (the flavouring in the pudding adds easy extra yumminess).
Then I basically use it wherever eggs are used in a cake - I eyeball the volume of pudding/ricemilk mix to match what I imagine an egg's volume would be :D
And here's the modified recipe:
1 and a half 125g soy puddings (vanilla if you want a golden sponge, or caramel for a kick) + 2 tablespoons of ricemilk (equates to 3 eggs)
75g sugar
25g cocoa
50g plain flour
Beat sugar and pudding mix until fluffy
Fold in cocoa and flour
Pour in tray and bake for 10 mins at 400F/200C/Gas Mark 6
Then it's filled with (soy)buttercream, rolled up, and covered in a spread; equal amounts of soy butter and icing sugar creamed together, with melted chocolate folded in .
